Vegetable Quiche Cups

1 10 oz. pkg. frozen chopped spinach
3/4 c. liquid egg substitute (or 4 eggs)
3/4 c shredded reduced fat cheese
1/4 c. diced green pepper (or red pepper)
1/4 c. diced onions
3 drops hot pepper sauce (optional)

Microwave Spinach 2 1/2 minutes. Drin Liquid.
Line a 12 cup muffin pan with foil baking cups and spray with Pam
Combine all ingredients, mix and divide among cups.
Bake at 350 for 20 minutes

I got this recipe from Geri Batt at work, who used to work for Weight Watchers. You can freeze the quiches and microwave to reheat for a quick breakfast.
